Chocolate Bean Cake #lc

Preheat the oven to 325°F.

Pulverize the beans in a food processor.

1 15 oz can black beans, or 1½ cups cooked black beans

Add and blend until smooth (scraping the sides)

5 eggs
¼ cup coconut oil
½ cup maple syrup
2 teaspoons vanilla

Mix separately

⅓ cup cocoa powder
1½ teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt

Blend all together, be careful not to over mix.

Put in a greased 9-inch cake pan. With parchment paper on the bottom. Add oil to the pan.

Bake for 40 to 45 minutes.
