Endive Salad

Peel and separate segments. Reserve juice for dressing.

2 grapefruit

Cook

2 1/2 cups shrimp

Halve, core, and separate leaves.

4 endives

Dice

1/4 cup red onion

Cut into 1/4 in. thick slices.

1 avocado

For dressing:

Whisk

Grapefruit juice
1 T. balsamic vinegar
1/4 tsp. minced garlic
1/8 t. salt, pepper
Slowly beat in 3 T. olive oil.

Combine grapefruit, endive, avocado, onion, shrimp, and dressing. Add salt and pepper, if needed.

Garnish with

1 bunch watercress
