Endive Salad
Peel and separate segments. Reserve juice for dressing.
2 grapefruitCook
2 1/2 cups shrimpHalve, core, and separate leaves.
4 endivesDice
1/4 cup red onionCut into 1/4 in. thick slices.
1 avocadoFor dressing:
Whisk
Grapefruit juice
1 T. balsamic vinegar
1/4 tsp. minced garlic
1/8 t. salt, pepper
Slowly beat in 3 T. olive oil.Combine grapefruit, endive, avocado, onion, shrimp, and dressing. Add salt and pepper, if needed.
