Garlic Lemon Quinoa and Vegetables

Cook in 5 cups water.

2 cups dry quinoa

At 10 minutes, add

1 t. salt
1/2 t. pepper
3/4 cup diced bell pepper
3/4 cup sliced mushrooms
3/4 cup green bean pieces
3/4 cup cauliflower florets

Cook 7 more minutes

Mix sauce and drizzle over

3 cloves garlic
4 T. lemon juice
3 T. honey

Top with Parmesan (optional).
