Chicken and Smoked Sausage Gumbo

Roux

Heat

1/2 cup oil

Add

1/2 c. flour

Cook, stirring constantly, until dark brown. Set aside.

In another pan, sautee

Smoked sausage
2 chopped bell peppers
1 1/2 cups chopped onion
1 cup celery

Add, then simmer 20 minutes

1 can (14.5 oz diced tomatoes)
Roux
1 tsp. pepper
2 t. Creole seasoning
2-4 cloves garlic
1/2 tsp. crushed red pepper
1 t. chili powder
1 t. thyme

Add and simmer 1 to 1 1/2 hours.

2 quarts broth

Add in last 30 minutes.

2 cups sliced okra

Add

2 c. cooked chicken
