Ham and sweet potato muffins

Dice and sautee

1 medium sweet potato
2 bell peppers
1/2 small onion

Stir in

10 oz diced ham

Whisk in

12 eggs
3/4 t. salt
1/8 t. pepper

Divide veggie and ham mixture among 12 muffin cups.

Pour blended eggs over veggies. Leave a little space at the top of the cup.

Bake 20-22 minutes at 350 deg F. Remove muffins from pan immediately.
