Kale and mushroom w/ riced cauliflower

Destem 3 bunches of kale. Boil in 1 cup water until tender. Chop and sprinkle with 1 1/2 T. red wine vinegar

Sautee

1 cup chopped onion
Add 2 cloves garlic
8 oz. sliced mushrooms

Add riced cauliflower, cook 1 min.

Add t. basil
2 cups broth
1 bay leaf

Simmer 12 min. Add kale and cook 5 min.

Sprinkle with parmesan cheese and pepper.
