Mediterranean Egg and Vegetable Strata

Serves 6-8

Sautee

1 chopped onion

Remove from heat, Add, and stir

Chopped spinach bunch
9 oz artichoke hearts
1/2 cup sun-dried tomatoes
Bran crackers

Scatter feta cheese on top

Whisk together in bowl

8 eggs
1 cup cottage cheese
1 cup milk
1 tsp oregano
1 tsp salt

Pour over vegetable mixture and gently distibute.

Sprinkle 3 T. Parmesan on top.

Bake until egg is set and dry, 40-45 mins at 350 deg F.
