Mint Cauliflower

Make riced cauliflower: Blend a head of cauliflower. Cook in oiled pan until warm.

For pesto:

Blend

1/2 cup cilantro
1 cup mint
1 garlic clove
1/2 tsp. salt
3 T. walnut
1 T. lemon juice

Drizzle in 1/2 cup olive oil.

Combine pesto, riced cauliflower, 1 1/2 cups peas. Season with salt as necessary.

Add kale, torn into small pieces and 6 radishes, sliced thinly.
