Mixed Bean Soup

Rinse and soak 2 lb bean soup mix. Drain, add new water. Simmer 30 mins.

Add

1 lb ground beef, cooked
2 14-oz can tomatoes
2 cups chopped celery
2 T. salt
2 tsp. thyme
4 cloves garlic
2 bay leaves
Pepper to taste

Simmer 1 1/2 - 2 hours. Add parsley, discard bay leaves.
