Sausage Jambalaya

Brown 2 Lb. pork sausage. Add 1 onion, cook 5 mins.

Add

1 diced bell pepper
2 celery ribs
Two cloves garlic
Cook 5 minutes.

Stir in

Riced cauliflower
Bay leaf
1 t. thyme
Paprika
Oregano

Cook 3 min

Add

8 cups broth
2 cans tomatoes

Simmer 20 min. Top with 6 scallions
