Turmeric Root Curry
Peel and grate six 2-in pieces of turmeric root. Use gloves. Sautee in coconut oil over med-low heat for 10 minutes, until slightly brown.
Add and sautee a few minutes
1 tsp grated ginger
1 chopped chili pepper
2 T. chopped cilantroAdd and sautee a few minutes
1 c. peas
1 c. chopped broccoliniAdd and cook a few mins or until it boils
1 tsp. fennel seed powder
1 tsp. coriander powder
1 tsp. garam masala
1 cup pureed tomatoAdd
10 oz canned coconut milk
1/2 to 1 cup waterSimmer 15 minutes, covered. Garnish with cilantro. Add salt to taste.
