Zucchini Coconut Porridge #lc

Comine all ingredients into pot

1 zucchini, grated
1/2 cup almond meal
1/4 cup sunflower seeds
1 cup coconut milk
1 cup water
1 cup dry coconut
1 tsp. ground cinnamon
1/2  tsp. ground ginger
Pinch nutmeg
2 t. vanilla extract

Heat slowly then simmer 3-5 minutes until zucchini is cooked a little and mixture is thick and creamy.
